It contains 20 papers presented at a workshop of the same name organized by ILSI Europe Natural Toxin Task Force.Held September 10–12, 2003, in Dublin, Ireland, the workshop focused on current knowledge on trichothecenes with respect to occurrence, including aspects of mold growth, toxin formation, storage and effects of processing; prevention; analytical methodologies, including sampling; surveillance and exposure assessments; and toxicology and risk assessment. A number of experts discussed topics including prevention, sampling and analytical methods, exposure assessment, and toxicology and identified areas where more research is needed.
