Mycotoxins in Fruits and Vegetables, edited by R. Barkai-Golan
and Nachman Paster, is the first book to provide a comprehensive
analysis of the main mycotoxins that occur in fruits and vegetables
and their derived products. The first of its three sections covers
safety evaluation, factors that contribute to mycotoxin production
and diffusion in fruit tissue, and the latest analytical methods
for detecting toxigenic fungi and mycotoxins. The second and
third sections focus on the individual mycotoxins and prevention
and control strategies.
The book was published in April 2008 by Academic Press.
